Before ordering a new replacement screen for my laptop, I want to be sure I'm ordering what is needed, and nothing more. 

The screen is shattered. The touchscreen feature is good for the most part...  except when trying to click on something where the screen is most shattered. 

I found this to possibly order:  

FHD LED LCD Touch Screen Digitizer Display Assembly for HP ENVY x360 15-aq173cl

Cost is about $150. 

Does this look right? I've found instructions on Youtube that look pretty simple for doing the replacement myself.

Yes the display is a costly part and including labor charges it usually comes up to around $250 or more.
