Hi I just wondered if anyone is having the same issue.

I've replaced the optical drive (d:) with the original HDD 500gig  and replaced the HDD (C:)  with an SSD 120gig. Formatted both drives clean windows install, all good been working for well over a year.

Now here is the problem if I'm not actively using the HDD (for a period of time maybe 5mins ?) it disappears, and I can't access it. It's fixed with a quick restart, but it's an annoying problem that I just can't seem to find a fix for. If I'm using the drive it works fine for as long as I keep using it. It's almost like windows is putting the drive to sleep,  after detecting it's not in use.

That is one of the problems with using an optical port for a hard drive. You get some weird behavior sometimes.

Have you tried setting the power profile to high performance instead of balanced or power saver? This will limit the OS'es ability to turn stuff off.
