I agree, TzortzisG. Nowhere in the information provided by INTEL is mentioned that the i7 12700H CPU can handle128GB (https://ark.intel.com/content/www/us/en/ark/products/132228/intel-core-i712700h-processor-24m-cache-...). On the other hand, it seems that dmidecode can be unreliable (https://community.linuxmint.com/software/view/dmidecode), so the information posted previously has to be taken with a grain of salt.

I am coming back just to supply the answer to the second question of my original post. When I finally opened the back of my laptop to inspect it, I saw written in the motherboard "GEN 3" below the secondary PCIe NVMe M.2 SSD and "GEN 4" below the primary PCIe NVMe M.2 SSD. This confirms the information given by Paul Tikkanen in the accepted response.
I am going to edit my initial post to wrap up the information.

Yeah, this is true about the m.2 slots:
Let me just add that if Amazon sells the previous (Tiger Lake) versions upgraded to 64GB DDR4 RAM HP Victus 16.1 by GreatPriceTech HP Victus 16.1 by SnowBell , I think it's safe to assume that the next generation (Alder Lake) has 0% chances of not running 64GB of the DDR5 cutting edge RAM (at least).
Thanks again for the updates!

I finally upgraded my laptop RAM with 2x32GB DDR5 RAM from Crucial, but now the BIOS is reporting 0MB of RAM and boot up takes much longer than previously. It seems this is a bug in the BIOS itself (https://h30434.www3.hp.com/t5/Gaming-Notebooks/Brand-new-Omen-17-2022-laptop-shows-total-memory-0-af...
I am opening a different discussion to try to figure out why (and find a solution).
