Hi, is it possible to add a SSD 500 GB on my Hp 250 G7 I5-8265U (6BP91EA ) to accelerate laptop performance? Which type should I use, SATA or M.2? Could you suggest a good and cheap one? Thanks very much

Hi:
Yes, your notebook has a M.2 slot that supports NVMe SSD's.
See chapter 1 of the service manual for the supported drive types:
Maintenance and Service Guide HP 250 G7 Notebook PC
I recommend this budget priced and good performing NVMe SSD:
There is one thing you should note about the model series...for whatever reason, the NVMe SSD's only run at around 1/2 of their maximum advertised speeds because they are only using two of the four PCIe lanes.
There is no fix that I know of, but even at half speed a NVMe SSD is still much faster than a SATA SSD.

Thanks, if I've understood I'd have to remove the hard disk to have a (single) 500 GB M.2 PCIe NVMe SSD, is that right?

You're very welcome.
You can retain the 2.5" drive for storage if you want and use the M.2 SSD as the boot drive, or you can remove the hard drive and just use the M.2 SSD.
Your choice.
You will need to remove Windows from the hard drive, or the notebook will always want to boot from the SATA drive first and not the SSD.
This video shows the location of the M.2 SSD in your notebook...

Great! On my PC I have Windows 10 upgraded to 11, I would only like a SSD memory. Should I have to buy another Windows license? How Should I install it on the SSD? From the cloud?

You don't need to buy Windows since your notebook came from HP with W10.
The Windows product key is in the BIOS.
You can use the HP cloud recovery tool and a 32 GB USB flash drive to create a bootable USB recovery drive that will reinstall Windows, the drivers and the software that originally came with your PC.
Here is an info link for how to use the utility.
HP Consumer PCs - Using the HP Cloud Recovery Tool in Windows 11 and 10 | HP® Customer Support
If you want to use the utility on another PC, you will need to enter your notebook's product number in the tool's search window in order to proceed to make the recovery media.
