I have a Pavilion 15.6 inch Gaming Laptop ec-2084.
1) Are there extra internal slots for SSD? I want to get more space, but not change the drive this laptop came with, so can I install another SSD inside or external SSD is my only option?
2) Can I connect two external monitors (through HDMI and USB-C) or my only option is the single HDMI port?

As far as I can tell there is only the single slot for an M.2 PCIe NVMe SSD that is available and it is in use. Yours may or may not have an extra slot. According to Crucial memory, it does.

An external SSD would be a good option.
Your laptop's USB 1 SuperSpeed USB Type-C® 5Gbps signaling rate port is not graphics signal capable, so using it for an external display output is not a viable option.
Some laptops in your 15-ec2000 model series do have the dual storage capability of 2.5"/7mm SATA HDD & M.2 PCIe NVMe SSD
