I need to replace the existing 256GB SSD M2 SATA SSD LITEON L8H-256V2G-HP built in the above-mentioned ultra-notebook with a 512GB SSD and will appreciate any advice on which one to choose. As L8H-512V2G is not available, I think LITEON LGH-512V2G (512GB) could be a good option, isn't it?
I also think of Samsung 500-512GB M2 2280 SSDs such as 850/860 EVO series (M2 SATA) and PM871 MZNLN512HCJH OEM (PCIe) which fall into the ranges of speed and price. However, I am not sure if they are compatible with HP Spectre x360 Convertible 13 4127-TU although I find in Maintenance and Service Guide for HP Spectre x360 Convertible 13 40xx and 41xx that the notebook should support both PCIe and SATA SSD configurations.
Later coming SSDs with higher speeds seem excessive in view of limited capacities of both Intel(R) Core i5-6200U CPU and bus equipped.

Any SATA-3 M.2 2280 SSD will work OK. There are no problems reported with compatibility on SATA M.2 disks. Don't undersell the advantages of the PCIe/NVME hardware. It is quite a bit faster and your laptop has plenty of processor and memory to take full advantage. A Samsung PM961 will be compatible as will an Adata SX6000. These are early examples of PCIe/NVME and seem to work on early HP NVME-capable laptops. Newer (and even faster) NVME disks like the Samung 960/970 series have reported issues.
