I want to upgrade my old and slow HP G62 with a new SSD and RAM and I have a few issues.
First, I found two very similar RAM packages on Amazon and I don't know what's the difference or which one will work with my laptop?

Second, is it possible to fit an SSD into the computer? And if it is, what is the recommended product?
Third, if I replace my Hard Drive with an SSD, will I need to purchase another copy of the Operating System or is there a way to save that?

You want the top memory package which is the correct speed and density for your laptop. The other memory is newer and likely not compatible. The top memory says it is for a Mac which is not in and of itself a problem but you might want to consider the memory recommended by HP:
4 GB (for models 1.1 and 1.2 only) 599092-001
You can absolutely install an SSD on the laptop. Assuming your Windows 10 is activated you can make a full bootable system image from Windows 10 or you can clean install again from media made from the media creation tool and the MS activation servers will just recognize your computer and you will be activated again even if you change the hard drive.
