Hi, I have a HP OMEN 17-cb0007ni with a HDD and 1TB of SSD storage. This 1TB SSD storage is made up of 2x 500GB SDDs. If I want to upgrade, must I replace each slot with a 1TB SSD (giving 2TB total) or can I put a 2TB SSD in just one slot (giving 3TB total)?

That is not a requirement.

You can put a single 2.5" SSD in or two 2.5" SSD in. Each SSD can be up to 4TB.

 

Don't forget the M.2 slot. PCIe 4 NVMe M.2  SSD is compatible.

 

SATA3 types for the 2.5" drives are compatible.
