I have an HP - Compaq Pavilion x360 14-dh100 CTO and looking to replace my Optane drive. For some reason, I can't get the computer to read the entire drive. It only reads 12.7gb of the drive, while it came with 16+256. I looked on crucial's website and found one. However, I believe none of them have Optane and I can't find anywhere to deactivate Optane on my computer. What are my options?

You list 14t-Dh200 CTO but also mention 14t-Dh100 CTO. In any event HP no longer has detailed specifications for either system. I managed to find something here that approximates what you discussed.
quote "256 GB Intel SSD + 16 GB Intel Optane memory"
The disk partition should look something like the following that I found.
The above 27 is what is available out of 32gb for speeding up the "C" drive which is 512gb
You have 12.7 and it is speeding up the 256 drive. Your "C" drive should be 256gb in size. Although disk 0 and 1 are listed, in reality there is only one memory stick, the "m.2" The "oem" partition should be something like "HP windows recovery" maybe.
This only happens if you enable RST (Intel rapid storage technology) in the BIOS. If your bios is set for AHCI or RAID then RST is not enabled. You also need to have the intel RST driver installed in windows as discussed here

Possibly I can help you if you have problems but long ago I removed my Optane m.2 and replaced it with a fast 1TB NVME and enabled AHCI
