I want to upgrade the RAM and SSD for my laptop (HP Pavilion X360 Convertible 14-cd0xxx). I would like to know which type of SSD will be correct for it : SATA or NVMe ? Also, can I use DDR4 RAM 8GB 3200MHz ?

According to your service manual, your model supports 16 GB (2x8 GB) DDR4-2400 memory. You can install an 8 GB DDR4-3200 in the empty slot, but it'll run at 2400 because that's the max speed your system supports.
Your model supports M.2 NVMe SSDs. You can get one with your preferred capacity, 512 GB, I TB or more. Your M.2 slot is PCIe version 3.0 (gen 3).
