Hi all,
I have an old HP OMEN Notebook PC 15 (15-5001ns), and I would like to upgrade the RAM and Hard Drive.
Currently, I have 16GB DDR3 and 500GB SSD but I'm not sure how much this motherboard can support and I couldn't find the information.
Motherboard is a HP 2332 (U3E1).

As far as memory, you are at the max.
See chapter 1 of the service manual.
The manual indicates that HP offered M.2 SATA SSD's up to 512 GB in the model series.
I don't see any reason why you couldn't install a 1 TB or 2 TB M.2 SATA SSD.
NVMe SSD's would not be supported.

I've found the specifications of the motherboard and here it says 32GB
Is this possible? Can you recommend any SSD of 2 TB for this laptop?

You're very welcome.
Yes, the processor supports 32 GB of memory but not in 2 x 16 GB configurations.
Some business workstation notebooks with that processor have 4 memory slots, and each slot supports an 8 GB memory chip.
It would be a huge gamble on your part to install 2 x 16 GB DDR3L-1600 memory chips and the cost would be extremely high if you could even find a 16 GB DDR3L-1600 memory chip for sale.
For a 1 or 2 TB SATA SSD, I recommend this model series:
