I can only answer about the data transfer.
What you can NOT do is simply copy files and folders from one drive to another; instead, you have to MIGRATE the Windows installation from the first drive to the second -- and this will include ALL the files and folders on the drive.
The BEST way to do this is to CLONE the first drive to the second. This requires that you have BOTH drives connected to a working PC -- but not necessarily the one you are trying to upgrade.
Download and install Macrium Reflect (MR) from this link:
http://www.macrium.com/reflectfree.aspx
Connect both the old a new drives to the PC.
Then view this link showing how to use Macrium Reflect to clone a disk:

Once that is done, put the new drive into the PC and it should boot without issue.
