I bought an HP Envy x360 - 15-bp152nr on 01-08-2018 and now I am facing an issue with some slow performance, I decided to change my drive 1: M.2 SanDisk SD8SN8U-128G-1006 to another M.2 Nvme so my question is below.

System configuration:

OS Name: Microsoft Windows 10 Home
System Model: HP ENVY x360 Convertible 15-bp1xx
Processor: Intel(R) Core(TM) i7-8550U CPU @ 1.80GHz, 1992 Mhz, 4 Core(s), 8 Logical Processor(s)
BIOS Mode UEFI
BIOS Version/Date: Insyde F.48, 10-11-2020
Installed Physical Memory (RAM): 16.0 GB
Drive 1: SanDisk SD8SN8U-128G-1006 -    X400 M.2 SSD 128GB
Drive 2: HGST HTS721010A9E630 - 931.51 GB

1: Can I change my drive 1 with 1 TB M.2 nvme and install a fresh OS? 

2: If yes then with generation SSD I can use any specific recommendation 

3: can we use 1TB PCIe NVMe M.2?

Yes it support NVME M.2. It is going to be limited to PCIe 3rd generation so Samsung Evo 980 (not Pro) would be about as good as it gets. 1 TB or even 2 TB will cause no issues. Don't expect miracles. The NVME M.2 is faster but in actual use its not that much faster on bootup and other things except straight line file transfer.

I have another question that is

You are not limited to the Samsung. Any brand NVME PCIE 3rd gen SSD should work. Western Digital makes good ones, for example.
