It has two slots and supports 16 GB (2x8) of DDR4-2400 ram. You can change the current M.2 drive to a larger size of your choice, to add a second drive you can only add a 2.5” HDD or SSD. But you must buy these parts
(9) Hard drive cable L23187-001
(10) Hard drive bracket L24490-001

Yes exactly, you can follow Crucial's suggestions or buy other brands. I don't know why Crucial indicates only one slot

I've had my eyes on these for a while, do you think my laptop will support them?
(note I plan to add the new ram to my current 4gb of ram to make 12gb)

You can do it but putting higher frequencies has no effect, the memory BUS decreases the frequency to 2400 to make it compatible with the processor, but if you want you can buy and use. NVMNe is fine
