I called Samsung yesterday (Samsung were very helpful and suggested I call HP) and HP today (the representative that tried to help didn't have the answer to my question).
I'm looking to see if my HP Omen Laptop AX-020CA can be upgraded with any of the following SATA SSD, I'm just going from 2TB HDD to 2TB SSD:
Samsung 860 SATA SSD
Samsung 860 Pro SATA SSD
Crucial MX500 SATA
If I decided to also upgrade the M.2 SSD, would any of the Samsung 970 series, evo, evo plus and pro be compatible as well?
I do video and photo editing and would appreciate the advice.

Yes I did have that model a while back or at least one from the same series. Yes it is compatible with a 970 Evo Plus. Somewhere there is a video of me replacing the 128 gig SATA M.2 that came with mine for a 500 gig PCIe/NVME M.2 SSD. The 970 was not yet on the market at that time, but would work. Keep in mind an NVME M.2 is going to be 4-5 times faster than a SATA like the 860 series.
Start on p. 32 to remove back cover and inside is this:
M.2 slot in red circle

Thank you so much for your response Huffer, just to confirm if any of these work as well, as I was hoping to replace the HDD with a SSD SATA:
