Hi, I have an HP 14-CK00061st laptop with a Linux OS and I want to upgrade my WiFi and Bluetooth chip. The laptop can't connect to my WiFi 6 home network, and I'd also like the benefits of using a newer Bluetooth standard.
Is the 14-CK00061st hardware compatible with an Intel AX210 or BE200 chip? It's running Linux instead of Windows so I'm not worried about driver support.
Correct me if I'm wrong, but I believe I'd want an NGWG.NV chip no matter which series I choose. That's the version with M2 form factor and no VPro
As a fallback, could I use an Intel AX200 in this laptop?

Here's the problem you have:
According to the parts list your notebook has a Realtek RTL8723BE single band Wi-Fi adapter.
Your notebook only has one antenna wire, and any Wi-Fi 6 card will need two antenna wires in order for the Wi-Fi and Bluetooth to work correctly.

So, unless you go through the trouble to order the dual antenna kit listed in chapter 3 of the service manual, and completely disassemble the notebook including the display panel to properly install the missing antenna wire, you will have a poor experience with the Intel AX210 or the AX200.
I have no idea if any of the cards you want to install will work because none of them were offered as options in the model series.
If you want to experiment, I'd go with one of these (if you install a second antenna wire).
Intel AX210 Wi-Fi 6E 2x2 AX + Bluetooth 5.2 M.2 2230 non-vPro HP part # / SPS # M27269-005.
Intel Wi-Fi 6 AX200 ax 2×2 + Bluetooth 5.0 MU-MIMO M.2 2230 non-vPro HP part # L35282-005.
I don't know if the below card is supported for Linux, but it would be an easy swap because it only needs one antenna wire for the Wi-Fi and Bluetooth to work:
