The manual is just a list of original configurations made at the HP factory. There is no limit on the capacity of M.2 SSD you can install other than your budget and what is being made by storage manufacturers.

So i can install a 480 gb or higher capacity ssd m2 sata with existing 1 tb hdd despite it is not recommended or mentioned in manual 256 gb m2 sata+1 tb hdd

Can i use nvme pcie or its not supported

If not please specify the supported m2 type

HP Recommended

Yes you can go 480 gigs or bigger on a SATA M.2 but cannot install an NVME M.2.
