So Im pretty sure HP EliteBook 850 G3 has 1 slot for an NVME SSD and 1 for a SATA SSD. I want to buy a SATA SSD since the NVME slot is already used, are there different types of SATA SSDs? If so which one would fit in my device?

You can install any brand 2.5" SATA SSD you want.
I recommend one of the Western Digital Blue SA510 2.5" SATA SSD's which should work fine in your notebook.
Below is the link to the service manual.
If your notebook did not come with a 2.5" mechanical hard drive make sure the parts are there to connect and mount the 2.5" drive.
Otherwise you will need to find and buy the hard drive hardware kit that is illustrated in chapter 3, page 27 of the above service manual.
