I'm replacing the battery in my Zook 15v G5. The battery I removed says "Replace with L08855-855"
In searching for a replacement I see there are the following two choices:

Battery, 4 cell, 70 Wh, 4.55 Ah / 917724-856
Battery, 4 cell, 52 Wh, 4.55 Ah / L08855-856

Do I assume the 855 has been replaced by 856 AND do I use the 52Wh L08855 or is the 70 Wh an option?

Yes, the 917724-856 is the 70Wh replacement battery.  On backorder via HP:

I would go with the 70 Wh option as per HP ZBook 15v G5 Mobile Workstation Specifications | HP® Customer Support, such as this purchase example: Genuine 70.7WH HP ZBook 15v G5 Mobile Workstation notebook laptop charger (battery-vendor.com).
