What you need is called a KVM switch and the type you need will depend on the type of connector that are at the PC and notebook and the numbers of displays you want to connect.

From the G5 Dock documentation:
" For USB-C® functionality, host PC must support the DisplayPort™ Alt mode protocol through its USB-C® port"
Your notebook does not have that functionality through its USB-C port.
