I only have a few applications on this device, I cleaned up the temp files, upgrade files, etc., and only have 3 GB or so left.
It's really annoying that they made the storage so small.
Is there a way to upgrade it?

You can not replace the eMMC storage but you may be able to add a hdd to it. The service Manual shows other models having this ability.

Windows.old is the old version of Windows. This is always created when a major update was completed. there is a breif 10 day period to go back to that old version of WIndows.

Of course it's the old version of Windows. That's why the directory is called... wait for it! Windows.old!
That wasn't my point. My point was that there is a lot more space available now than there was before the update happened.
