Your service manual (on pages 2-3) states that your model supports an M.2 NVMe SSD if it comes with an Intel Core 7th or 8th gen processor.

If you are not sure about the model of your processor, go to Device Manager and hit the processor entry.

That's strange. The service manual I linked came from your support home page.😲 Obviously, it's the wrong manual.
HP Laptop PC 17z-ca300 CTO - Setup and User Guides | HP® Support
Your Ryzen processor supports M.2 NVMe SSDs PCIe gen 3x4.
M.2 NVMe SSDs gen 4x4 will work but run at gen 3 speeds.
Basically, M.2 NVMe SSDs have no capacity limit. You can install M.2 NVMe SSD of 256, 512 GB, 1 TB or more.

This is the manual for 17z-ca100 CTO, but even this older version says M.2 NVMe SSDs are supported (see page 3). So, you should be OK with an M.2 NVMe drive. Again, you can choose any capacity you want.
