The 16-r1xxx models with the Intel 'HX' processors such as yours, have two M.2 SSD slots.

There's no limit to the storage capacity you can install as long as the drive is single-sided so it fits in the SSD slot and thermal enclosure.
The notebook model series supports NVMe PCIe Gen 4 x 4 drives.
Any brand should work but some models have faster read/write speeds than others.
Since this is a peer-to-peer forum and we don't work for or represent HP, we are not authorized to reply on HP's behalf regarding the warranty terms and conditions.
If you look at chapter 5 of the manual it indicates that upgrading the memory/SSD is a customer-authorized procedure, so off the record, I would say it would not void the warranty unless you break something in the process.
If you have any doubts, I suggest you contact HP customer service regarding the warranty situation starting at the link below:
I do know this for a fact...if your notebook ever needs warranty service, you must return the notebook to its original hardware configuration as you bought it, so save any parts you remove to upgrade such as the memory.
