According to the service manual (on page 2), your Intel Core processor-based model supports M.2 NVMe SSDs.

Maintenance and Service Guide HP 250 G7 Notebook PC

 

A gen4 SSD will work but won't run at the designed read/write speeds out of your gen3 M.2 slot.

 

You can install an M.2 NVMe SSD of any capacity you want, such as 1 TB, 2 TB or more.

 

Page 40 of the manual describes M.2 drive installation procedures.
