I am sorry this happened to you.
You must have physical to the machine to access data that is only stored on in the computer.
Worse news, then...
It sounds like you never made any backups, either.
Assuming the thief did not get access to the account and your data,
Any data you have stored in your Cloud storage is likely still there, at least.
For example,
If you are using OneDrive, the data in OneDrive is likely still in the OneDrive Servers and can be accessed using your Microsoft Account information.
Best retrieve any cloud data while you can still do so.
What else?
Many times, when a computer is stolen, the account data on the computer is never accessed.
The hardware is sold, bartered, traded, or stripped and used for parts. The Operating System might be reloaded.
This possible scenario does NOT mean you will ever see your data again -
It just means that the data itself is not automatically in the hands of the thieves.

Sorry to say but if your device has been stolen then you won't able to access or restore your data until & unless your data is stored on Cloud. In case of damage, data can be recovered from any drive or device but when its stolen it means you don't have physical access to the drive and without that data cannot be restored.
So, if you have your data on Cloud such as Google Drive or iCloud then try access your cloud login and restore your data.
