I have notced lately any Microsoft update takes a long time. If the laptop was in the store for a while it may have older released software and the OS and any apps pre loaded will be doing updates.
I would just let it do its thing and make sure it is pluged into power.
Microsoft also is adding a lot of junk on releases and it may be wise to look at any addons they added including browser stuff.

What is likely to be the case is that your PC is downloading the Oct 2018 Feature Upgrade -- which is essentially a whole new version of Win10 -- and that takes several GB of disk space to hold the files.
This is because, as @tsac indicated, even a new PC could have sat on the shelves or in a warehouse for weeks or months, and when you first power it up, it will contact Microsoft and look for the latest updates.
