I want to try change the fan speed using a software of my HP ENVY x360 Convertible 15m-eu0xxx.

No, your machine does not have this option. Heat sensors of machines will control fan speed. This is understandable because HP does not want users change  fan speed up/down and break machines during the warranty period.

 

Hope this makes sense.
