How to fix Word switch back to default language when typing? Detect language & Check Spell are OFF

Word 365 Home cannot switch language. My Windows Primary Display language is English. When creating blank document, Word language bar displays English correctly. Using language bar to switch to Chinese with Do not Detect language nor Do not check spelling and grammer will work until typing begins; at that point language bar will switch back from Chinese to English. Using language bar to switch back to Chinese does not improve issue.

I did not select Chinese as default language because that is not my regular language.
