Bought the laptop a week ago from hp online shopping site. It said that the laptop includes office home & student 2016 and laptop also bears a sticker saying it's included but when I opened excel, office 365 opened and it's prompting me to buy license. How do I activate the already included office 2016?

The Office versions generally included with HP PCs are trial versions and do not activate, as such.
But since you claim to have an actual paid version, your best bet really is to contact HP Customer Support to have them put you in touch with HP Tech Support to get this straigtenede out.
You paid extra for Office, so I see no point in throwing that money away to use an alternative -- free or not.

Included, Yes it probably is, so is Microsoft Edge I believe.
A prepaid Licence/Activation Key was included for Office?
To activate the already included Office 2016 contact Microsoft, or the original seller or just buy a Licence.
To create a document consider LibreOffice.
It is a Lo-Cost/No-Cost alternative.
