If I update my graphics driver and it causes problems, is there a way to roll-back to the previously installed driver?

Hi:

What I recommend is to create a system restore point before updating the graphics driver.

That way, if you can't roll the driver back in the device manager, you should be able to restore your PC's configuration to the restore point you created prior to installing the driver.

See this link regarding creating a restore point.
