purchased a new HP Laptop 17-cn2068cl that will shut off and on via usb-C G5 docking hub but won't recognize multiple monitors. When i connect a different laptop that work fine so i know it's not cables or connections.

They are NOT compatible. I can't find the specs of your machine but it has same ports as the following machine
It ONLY has 1 hopeless SuperSpeed USB Type-C® 5Gbps signaling rate port which does NOT support Alt mode nor Power Delivery. You can NOT use it to
- Charge your machine,
- Connect to an external monitor with/without hub/dock/adapter (some hubs may have builtin chip to support this)
If you wish to connect 2 external monitors (only-total 3), you can use
- Monitor 1: HDMI direct cable,
