I know the HP Laptop 17.3 inch 17-cn3028TU doesn't have USB-C Thunderbolt.

 

My question is, can I connect the HP G5 dock using a USB-C (female) to a USB-A adapter(male) to attach multiple screens?

Tat is NOT going to work. The specs of your machine is

It has a hopeless USB Type-C® 5Gbps signaling rate (supports data transfer only and does not support charging or external monitors)  port. If you wish to connect to 2 external monitors you can use

 

  • Monitor 1: HDMI direct cable,
  • Monitor 2: Using a Displaylink Certified USB-A to HDMI adapter such as

                                     USB to HDMI Adapter

 

Other option: Use HP 3005pr dock
