I am setting up my new HP OmniBook X Laptop with new HP usb-C Dock G5 station.  There is only 1 HDMI port and want to attach 2 monitors. Is there a specific splitter that would work?

No, HDMI splitter is a joke, you can only get SAME contents on both monitors. The dock has 2 more DP ports, you can use a DP to HDMI cable to connect to the second HDMI monitor.  DP and HDMI use digital signals, you don't need a converter. For example

Many around and much cheaper too (bidirectional cables are more expensive)

Regards.
