Same issue with USB dock G5 and HP Spectre x360 13. BIOS upgrade via HP support assistance helpen instantly.

It is necesarry to go to details in HP support assistant as overal view shows than everything is up to date.

I have a Spectre x360 Convertible 15-df0xxx which has had this same problem since the times everyone else has mentioned. The dock has worked for everything through this time except HDMI. I've managed to do all updates mentioned in previous replies, but no change in status. I did not reset everything from a power off state, which is what I'll try next. If you don't see any update, it didn't make a difference.
BTW, the BIOS firmware update I saw and loaded was F41, unlike the one cited previously. I should also add that I'm running Windows 10 Pro version 1909 build 18363.1198. I also updated the dock firmware to 1.0.9.0 from 1.0.7.0. My hunch is that this problem began as a consequence of a Windows update, so my next step will be to update to the May 2020 version and see if that changes anything.

Definitely contact HP, they will run through a whole bunch of steps and checks and may fix it.... for me it did not, I'm currently waiting on what HP want to do but I'm hoping for a replacement laptop as they have no idea what is going wrong.

I'm glad this thread exists but unfortunately it hasn't helped me at all.
I bought this HP spectre x360 15-eb0xxx about two weeks ago upgrading from an HP spectre ~2017 which worked perfectly with my G5. I also have an HP EliteBook for work that works fine with the G5. Just so happens to be my brand new laptop that doesn't work with its own brand dock...isn't that interesting? I actually had the dock working for a while with the new Spectre after a few hours on the phone with support..not sure what they did but then any time I booted the laptop up from hibernate/sleep with the dock plugged in the system would unexpectedly crash, so here I am.
I've upgraded the firmware of my G5 to the 1.0.9 or whatever, updated my bios to the HP support recommended F.07 from July 2020, updated my Intel graphics driver to version 27.20.100.9030 from 11/27/2020 and even tried the game-ready driver from 12-09-2020 and studio driver from 11/6/2020 on windows 10 version 20H2 19042.685 after being instructed from HP technical support to use their cloud recovery to completely rollback my laptop. I've pretty much exhausted all options and am just going to give up before I spend my entire weekend wondering why HP doesn't have their crap together. I'm really just debating on just trading out laptops while all the holiday sales are going on. HP can't even sync up their own products, why would I spend almost $2k for this faulty incompatibility and headache? So frustrating.

Giovanni_L, 100%. I have the same model number, and the same problem. Adding to this, I have two docks: the G5, and the higher wattage thunderbolt dock. NEITHER work with my spectre. the G5 works fine with a family Envy x360, and it works fine with a work business class HP (Elitebook I think?). The $300ish Thunderbolt dock is a complete waste of money so far, not sure if I can return it because it has been a month of screwing with it.

Don't give up - this is not Hardware. Just to clarify my situation: I downloaded my drivers directly from the Intel WEBsite and from the NVida WEBsite, NOT HP. After that, my dockings (both G2 at work, G5 home and a noname USB-C dongle from eBay) work with external monitors again. Same problem solved for 3 different Spectre x360-15.
I observe that Intel Support Assistant reports other driver versions for Intel UHD Graphics than the Intel App "Intel Graphics Command Center". HP reports 27.20.100.8783 (9.24.2020) and Intel reports 27.21.14.5638. It's a similar observation with the NVida driver, NVida reports a newer date (versionnumbers don't compare at all). Windows Devicemanager reports same versions as HP Support Assistant. That's truly strange, since it indicates that I still have the HP drivers in use. But the installation of the non-HP drivers was a solution, so stirring drivers obviously has the potential to solve the issue.
Here are some other shots in the dark:
1.
Go to the Intel WEBSite (Download Thunderbolt™ 3 DCH Driver for Windows® 10 for Intel® NUC) and install the Thunderbolt driver. If you have a Thunderbolt G2 or Thunderbolt 3 dock it should show up. G5 dock doesn’t show up (not Thunderbolt).
2.
Download anything you can get for your system using "Intel Driver and Support Assistant" by Intel.
3.
Go to the DisplayLink WEBSite Windows (displaylink.com) and download DisplayLink USB Graphics Software for Windows. You will probably see no DisplayLink HW attached, but your external monitor(s) should show up.

I've gone through all these steps repeatedly. Oddly, it was working last night after using the HP drivers - only to stop working again in the morning. Brand new unit ordered Black Friday. Will be following this thread for the coming of HP Dock Jesus. Or a tech who pities us.

I finally have my USB-C G5 dock working with my external monitors again! I have been following this thread for almost a year, so I figured I'd join to share my solution. I have a 2019 HP Spectre x360 15-df0xxx with Geforce 1050 Ti.
1) First, download Display Driver Uninstaller from the following link:
https://www.wagnardsoft.com/content/display-driver-uninstaller-ddu-v18036-released
2) Download Nvidia Studio Driver 461.40 from Nvidia's website (don't install until step 6)
3) Download Intel Display Driver 27.20.100.9168 from Intel's website (don't install until step 6)
4) DISCONNECT THE USB-C G5 Dock, and reboot Windows 10 into Safe Mode
5) Run Display Driver Uninstaller. First, uninstall the NVidia GPU drivers. Then without rebooting, uninstall the Intel display drivers. After both drivers are uninstalled, reboot Windows 10 normally.
6) Upon reboot, install Intel Display Driver 27.20.100.9168, followed by Nvidia driver 461.40.
7) Reboot your computer
8 ) After the reboot, log into Windows and then reconnect your USB-C G5 dock. Your laptop should now recognize any external Displayport monitors connected to the dock.
I highly recommend creating a Windows System Restore point prior to performing this procedure. Also, I have automatic driver downloads disabled in Windows Update. You may want to do the same prior to performing this procedure to prevent Windows Update from installing other drivers upon your reboot from Safe Mode.

Remember to try updating the BIOS using the HP Support app too. For me, this fixed the issue a few months back (see a previous post of mine), and I didn't have to mess with any drivers or anything like that.

I did all of the things, still to no avail. I contacted support to return it, and...
1. They sent me a replacement. The replacement works 100% without a hitch.
2. The warranty was mysteriously already six months in, despite it having been ordered two months ago—leading me to believe that I was shipped a returned item even though it was supposed to be new.
100% this was a device issue. 10/10, would replace again.
