I would like to connect my HP Envy x360 Convertible 15-dr1xxx to two HDMI monitors in extend mode (i.e., not just mirrored). Can this be done using the laptop's USB C port?

What is your HP Envy x360 Convertible 15-dr1xxx ? Probably it has same ports as the following machine
which shows it has
1 USB 3.1 Gen 1 Type-C™ (5 Gb/s signaling rate, Power Delivery 3.0, DisplayPort™ 1.2, HP Sleep and Charge) port
and use
65 W AC power adapter
You should be able to use HP USB-C Gen 5 dock to connect more monitors and charge your machine.

Thanks for your response. My model is the HP Envy x360 - 15t-dr100 CTO. Can I assume that the lightning bolt next to the USB-C connector (pictured) indicates that this functionality is supported?
I used the HP Support Assistant to ensure that my system is up to date (including the HP Notebook System BIOS Update for Intel Processors, v F.10). I then tried the naive approach of using a USB-C to Display Port adapter cable I found laying around the office, but it failed to recognize my monitor, which was connected using an HDMI to Display Port cable.
I'm willing to give the dock a try, but they're quite pricey, so I would like to have confidence that it will work before I make the investment.

It is a CTO machine, I can't find its specs. The lighting symbol may not mean it has Thunderbolt port it simply means HP Sleep and Charge . Your machine should have same ports as the following machine:
which shows it has 1 USB 3.1 Gen 1 Type-C™ (5 Gb/s signaling rate, Power Delivery 3.0, DisplayPort™ 1.2, HP Sleep and Charge port.
As I say above, I don't have the specs of your machine therefore I won't know the dock work or not.
