I have an HP Pavilion - 15-cc187cl and would like to attach two additional monitors, only one hdmi on this laptop which works. I have gotten a usb c to hdmi adapter to try to add the second monitor and it doesn't work. I can't find anything about whether this laptop is capable of using DP Alt Mode or not anywhere. That's all I want to know.

No, Port does not support DP Alt Mode.

Left side - USB-C port (Item #5)
Used for charging small devices (phones), high speed data transfer
