1. How many displays can I use simultaneously with HP Pavilion 15 (Ryzen 7 5700U)?

 

2. Is there a place where I can find such info for HP notebooks by myself?

Recently, I was able to test the said laptop.

Supports up to 4 displays (3 external monitors and one built-in) at the same time.

I can't find your Pavilion 15 anywhere. Well, actually it is everywhere. What is it ? Please use System information to find out what it is. For example
