Furthermore, the device has a HDMI-port, and a USB Type C port. I wish to know if I could use just any USB Type C to VGA converter for one of the two monitors?

No worries, as I'll be glad to help you, that said, I'll need a few more details to dissect your concern & provide an accurate solution:
What is the product number of your device? Use this link to find it: http://support.hp.com/us-en/document/c03754824
(Ensure you do not share any of your personal information such as serial, phone number, email ID, etc...).
Does USB Type C is a Thunderbolt port?
You could connect one of the monitors with HDMI cable and to answer your last question about using USB Type C to VGA Converter, I would need the exact product number of your notebook.

I do wish to connect the notebook to two external monitors, indeed.
What I also wish to know is if this notebook can handle 2 external monitors, whilst the notbook display itself is still able to be utilized.
Effectively that is a triple monitor setup.
Furthermore, as you said, I wish to know if I need to look for anything specific with regards to hooking up a VGA monitor to the USB Type C port.
My product number is IVA54EA#ABH.

As @Flower_Bud is out of the office today, I'm replying to you.
I see that you have an HP ENVY - 17-ae020nd laptop. And it has a USB thunderbolt port and an HDMI port.
You may use the USB type C to VGA converter of the monitor does not have a type C display port. And the other monitor can be connected to the HDMI port.
Also, this HP document might come handy when you would like to connect and use multiple displays.

Just one question remains now, how many displays or what resolution is the maximum for my notebook to deliver output to?
In other words, can I use two external monitors while also using the notebook itself (effectively a triple monitor setup). I can't find the maximum resolution or number of output devices of the graphics card in the notebook.

The laptop has an integrated graphics card and it may not support a higher resolution.
It should support a maximum up to 1920 x 1080 display resolution.

Please click here to check the detailed product specifications of your HP ENVY - 17-ae020nd laptop. The product specifications do not show the Nvidia Geforce 940MX ggraphics card is present.
However, the Nvidia Geforce 940MX graphics card should support 4K display resolution.

Hey there, I ended up buying a converter from thunderbolt 3 to vga, which I hooked up to a 1920x1080 resolution monitor. I then hooked up another 1920x1080 monitor using the laptop's HDMI port, using a regular HDMI cable. When I did so the laptop was able to push to both monitors, yet still also pushing the internal one. Effectively this results in a three monitor setup. I haven't tested attaching three monitors through a dock (but my guess is that It'll either power three, but NOT the internal monitor, or simply will not push more than two external monitors).
So as long as you have the same model as I do (with the Intel Core i7 7500U CPU / HP 834D (U3E1) motherboard / NVIDIA GeForce 940MX GPU) you should be good to go doing what I did (two external monitors, optionally able to use the laptop's own display as a third.
