I was recently upgraded to an EliteBook 840 G9 and a USB-C dock G5 to connect the laptop to the displays.
I have 3 P232 monitors--which have a DisplayPort and a VGA port.
The USB-C dock G5 has two ports for DisplayPort and an HDMI port.
I thought a DisplayPort to HDMI adapter would solve the issue but that does not appear to be the case.
Do you know by chance how I can connect the three P232 monitors to the USB-C dock G5?

That is not simple, you can use normal DP to HDMI cable but you can't use same cable to use another way around. You need a bidirectional DP to HDMI cable that means you can use HDMI to DP and DP to HDMI. There are many Uni-Directional DisplayPort to HDMI cables around but very hard to find bidirectional DP to HDMI cables.
My suggestion use HDMI to VGA adapter.
