Hello,
I just purchased a usb c to hdmi adapter for my laptop hoping to add a second external display. One via the laptop's HDMI port and another using the USB-C port. Both monitors work in the HDMI port, but neither work with the USB-C port either by itself or in conjunction with the additional monitor.
The adapter specifically states being compatible with Display Port Alternate mode:

I purchased the computer from Microsoft, and the product websites specifically states that the USB C port can be used to add a monitor.

All software and drivers are up to date to the best of my knowledge. What am I missing?

The specs of your machine is

It only has 1 USB 3.1 Gen 1 Type-C™ (Data Transfer Only, 5 Gb/s signaling rate) port. USB-C to HDMI cable/adater will never work. Your machine does not have Alt mode.
It has HDMI port which allows you to connect to an external monitor.
