I read this old post and hoping things have improved since 2018. I have new hp elitebook 850 g7 and want to continue using my 3 external monitors set-up. My existing setup involved a hp docking station that provided 2 Display Ports and one VGA.
Now in 2021 it seems like I cannot find an dock that supports similar setup; and it seems like support for 3 external monitors has become more difficult. Any recommendations?

I'm using a USB-C Gen 5 dock for my 840 G5 machine. I did test few months back with 3 FHD monitors and they worked. I believe 850 G7 should work. I have not tested 4K monitor because I do not have one, will buy one when any of my 5 FHD monitors fails.
