I have a 5 yr old HP Spectre 360: Is it possible to upgrade from Intel(R) Dual Band Wireless-AC 8265 to an AX card? Thanks

Unfortunately, that would not be possible.
Your notebook's model series are one of the very few where the Wi-Fi adapter is an integral part of the motherboard and cannot be removed or upgraded.
If you look at chapter 3 of the service manual, there is no part number for the Intel(R) Dual Band Wireless-AC 8265Wi-Fi adapter.
If you look at chapter 5, there is no procedure to remove or replace the Wi-Fi adapter.
