I have HP Pavilion Gaming Laptop - 15-dk1035nr and over the last couple months audio consistently stutters with any bluetooth headphones I use. I've done everything I could possibly find suggested, including everything in this post: https://h30434.www3.hp.com/t5/Notebook-Audio/Stuttering-Choppy-audio-when-using-bluetooth-headset/m-...

I don't know what BT driver version you have installed, but from what I could find, the one I posted below is the latest version for the RTL8822BE/CE Wi-Fi adapter:
1.9.1051.3011
I don't have any other ideas other than upgrading the Wi-Fi adapter itself.

Thank you Paul! So far it seems like this has helped... Device Manager said I had the most up to date driver but I suppose the reinstall was the key.
For my reference, how does one find the right driver to install? Would like to be more self sufficient on this and finding the right information sometimes seems more difficult than it should be!

You're very welcome.
It's hard to keep up with finding the latest driver versions.
If you rely solely on your notebook's support page, HP quits updating the drivers after a while.
You have to have a working knowledge of what newer HP PC's are out there that use the same Wi-Fi adapters.
What I do is to go to the HP business class PC's which seem to have the latest drivers available.
But in the case of the driver I found for you, that was actually from the 15-fd1000 consumer model notebook like yours:

The latest one on your notebook's support page is ancient history:
HP Pavilion Gaming Laptop - 15-dk1035nr Software and Driver Details
So, check newer HP notebooks for newer drivers.
If you want the latest Wi-Fi driver for the Realtek AC Wi-Fi adapter your notebook comes with, here it is:
