When I cast to a screen using WIFI I (using a Microsoft wireless display V2 adapter) I can not use the internet at the same time as it drops the connection to the access point

Your machine uses single wifi connection therefore you can't connect 2 networks (one is the wirless screen and one is your normal router) at the same time.

 

The solution is ONLY use one network by connecting your screen to the SAME router with your machine.

 

Does your screen support that ?  Many smart TV's now support connecting ti your home network.
