Well, Updates are always suspect, right? Windows Updates are usually great - until there is one that isn't.
Norton staff likely doesn't see (or know about) anything in the most recent Norton update that can squash your network choices. Doesn't mean there is not something "there" but it does mean Norton has not yet heard anything that would do this.
Just be be sure, open your Norton software Settings and make sure there is not a new block of some sort that might impinge on the availability of your network choices. I cannot tell you exactly where to check - I do not use Norton Security.
Assuming your security software is not outright stopping you from doing so, and Windows Updates has not done anything to you, you can perhaps manually add a network.
Control Panel > icon view > Network and Sharing Center
Set up a new connection or network
You can also try > Troubleshoot problems
