I wonder whether any of you good people could please help me. What sort of docking station do I need for a HP ProBook 640 G5 ? Niether the manual, nor the website, tells me - other than than I have a docking station port on the side of the machine.

You can use HP Thunderbolt Dock 120 W G2 as mentioned on its manual (page 1):
