Hullo!
I cannot get an option to PXE boot for an HP Elitebook 845 G7. There is no NIC built-in, but I have a USB NIC that works when in Windows.

We've had that issue elsewhere.
if you can't use the G5 USB-C docking station then you can buy a USB 3.0-to-ethernet adapter. Which ones work best, it depends. I know that D -Link didn't work with regard to PXE boot. You basically need a cheap 'dumb' adapter $13-$20 each, likely a no-name brand. I'd suggest avoid using one that is multi-purpose--the ones that also include additional USB ports.
P.S. i did see where you say you have a USB NIC. just saying that brand may not work properly for what you want. it also requires tweaking the boot options a little to get it right.

Using WinPE 10 driver pack from 3/19/2020. Looking at drivers used, rtux64w10.sys is the nic driver reported by the OS. I do have rtux64w10.INF 10.33.0419.2019, rtux64w10.INF 10.2.0616.2015 in my HP WinPE Drivers. I would assume as long as you are using the latest WinPE Driver pack you should be fine, if not, its time to update.
