Currently we have HP 840 G8 / G9 and 845 G10 EliteBook laptops. We historically PXE boot using a USB-C ethernet adapter and everything works fine. On a lark I thought I would try PXE using a straight USB-C to ethernet cable (Amazon.com: USB C to Ethernet Cable 10FT, Type C to RJ45 Cord, Directly Connected, Gigabit LAN Netwo...) but when I PXE the option does not show. Is this even possible?

The BIOS is not seeing a NIC card present as it needs an adapter be connected. Ideally, Your adapter needs to support MAC Address Pass-Through (MAPT) to get features like PXE and Wake on Lan working reliably especially if building from services like SCCM etc... Even cheap adaptors can cause issues. To get a decent one I'd recommend something like this one... HP USB-C to RJ45 Adapter G2 - Setup and User Guides | HP® Support.

Does it have to be an adapter? I'm using a straight USB-C to RJ45 cable.

Yes, as there’s no NIC adapter in the laptop itself. MAPT enables the adapter you connect to take a unique MAC address from the BIOS of the laptop and sets that on the adapter which then allows systems like SCCM to build the device as a unique device.

On the G10 I have found I had to disable Secure Boot and clear the TPM to use the USB C to Ethernet adapter. On the G8/G9 series, I had to use a USB A to Ethernet adapter. I keep both in my toolkit just in case.
