Hello, I have an HP laptop 14-ec0355ng with a built-in Realtek RTL8821CE wifi card and I would like to replace it with a Wifi 6 card. Which Wifi 6 card is best for this?

There are many excellent Wifi-6 card options, not in the least the USB 3.x-connected Wifi-6 cards such as this one you can plug in one of your SuperSpeed USB Type-A ports: USB WiFi 6 Adapter for PC, QGOO AX1800 USB 3.0 WiFi Dongle Dual Band 5Ghz/2.4Ghz High Gain Dual 5dBi....
This option also has the advantage that it is easily ejectable/removeable and can be transferred to another PC.
[EDIT:] Here is a WLAN Wifi-6 card replacement option I think is compatible with your Pavilion laptop: an Intel AX200NGW (p/n: G86C0007U410) as seen here: Upgrading HP Pavillion Notebook wifi card to wifi 6 - YouTube.
