I fell into the hands of a laptop HP ProBook 4320S with a dead HDD. The sticker on the case is preserved, but only partially: the number looks great, and the version (Pro or Home) and bit depth is unknown. Can I somehow find out the type and bit depth of the OS that was installed by the manufacturer?

Unfortunately, not without booting to the hard disk.
It could have been Windows 7 Home Basic (32-bit), Home Premium (32-bit), Professional (32-bit) or Windows 7 Pro (64-bit)

Usually the numbers work on either.
The problem you will run into is that the installed OS was an OEM version, not a consumer version.
